Post Election Day Comfort & Celebration

The Best Sweet Potato Pie Recipe Ever

 If you want to try a scratch pie crust, just look on line, but scratch is too tough for me these days, so don't feel guilty if you simply use your fave ready-made crust.  It's till going to be a rocking pie!

Pie Filling ingredients:

2 C cooked sweet potatoes, mashed
1 C granulated sugar
1/2 C unsalted butter, melted
2 eggs, beaten
1 t vanilla extract
1/2 t salt
1/2 t cinnamon

1.  Heat over to 350 degrees

2.  In a large mixing bowl, stir all the ingredients together.  Pour into pie crust shell.  Cover edges of pie crust shell with foil ring to avoid burning.

3.  Bake for 1 hour.  Serve warm or at room temperature with real whipped cream and a dash of cinnamon.
