Yumminess

I haven't tried them yet, but as soon as this heat wave breaks, Baked Peaches with Pine Nuts is on the menu!
This is what you'll need to serve 8:

1/2 C dry white wine
3/4 C sugar
8 large peaches, peeled, halved and pitted
4 Tbs. butter
3/4 C pine nuts

1.  Preheat oven to 350 degrees.  Whisk together wine and sugar in a small bowl.
Place peaches cavity side up on a foil-lined baking sheet: fill each cavity with wine mixture.
Bake one hour, or until tender.


2.  Just before serving, melt butter in small skillet over medium heat, add pine nuts and cook 3-4 minutes, or until pine nuts are golden brown.  Careful, they burn easily.


3.  To serve: Place 2 peach halves on each plate, top with 1 1/2 Tbs. of pine nuts.  Serve warm, with a scoop of vanilla ice cream or creme fraiche!
